
Homestyle Boiled Cucumber
Cured pork slices render their smoky fat to wok-fry peeled cucumber with whole garlic cloves and chili, the melon turns tender and savory-sweet while the aged pork perfume makes a humble home dish sing.
Instructions

Pick two cucumbers, preferably the white-skinned kind. Green ones are also fine; the slightly older ones have a better texture and more aroma. Peel them and cut into thin slices.

Smash the garlic cloves to remove the skin and take them out, no need to chop finely.

Take one chili, rinse it with water, and cut it into small sections.

Cut the cured meat into small slices the thickness of a coin.

Put a small amount of oil in the pan, then add the cured meat and sauté over low heat to release the fat. It's best to sauté until the meat is dry but not burnt. Then add cucumber, chili, and garlic,

Add chicken bouillon before taking it off the heat. The flavor is better when slightly cooled.
