
Stir-fried red amaranth
Red amaranth wilts into a striking magenta pool with garlic and a whisper of water, finished with a spoonful of lard for gloss, and locals love spooning that crimson broth over rice.
Instructions

Cut the amaranth, wash it clean, and drain the water.

Smash the garlic cloves to peel them and then dice them (just make a few random cuts, or you can skip it).

The pot emitted a slight smoke into the air.

Add some cooking oil.

Stir-fry the garlic until fragrant.

Stir-fry the amaranth leaves, add a little water halfway through, and in the end, there will be red broth (my favorite is to pour it over rice).

Adding a small spoonful of lard before taking it off the heat can enhance the color of the dish.

Plating (make a small hole in the middle with chopsticks; Mom said this way the dish won't easily get trapped inside and turn yellow).
