Stewed winter melon

Tender winter melon slices simmer slowly with savory pork, Sichuan peppercorns, ginger and garlic until soft and glossy. A light, homey braised dish where the melon drinks up the meaty broth and turns dark, sweet and meltingly tender.

    Peel the winter melon and cut it into thick slices; if there are no seeds, there's no need to remove the core. Cut the flesh into slightly thick slices.

    Cut the ginger into thin strips, mince the garlic, and cut the green onions into medium lengths.

    Put a bit more oil in the pan, add Sichuan peppercorns and ginger. Add the sliced meat and a little salt. After the meat is cooked, add green onions and garlic.

    Add the winter melon, stirring continuously. When the winter melon softens slightly, add soy sauce, salt, and MSG, and continue to stir-fry. Turn the heat to low, add a little water, and simmer until soft and tender. Turn the heat slightly higher and stir until the winter melon turns completely dark in color, then turn off the heat. You can cover and let it sit for a while; there is no need to add sesame oil.
