Charred Black Pork Chop
Black pork ribs are marinated overnight, fried twice until deeply caramelized, and served over crispy fried yam chunks. Charred edges give way to juicy meat, while the sweet starchy base soaks up every drop of savory drippings.
Instructions
- 1

A bag of black pork ribs.
- 2

Wash the black pork chop, repeatedly soak out the blood and pour it out, changing the water multiple times.
- 3

Add cooking wine, green onions, and ginger, blanch the ribs until fully cooked, then remove them.
- 4

Marinate the ribs with cooking wine, light soy sauce, dark soy sauce, oyster sauce, salt, black pepper, and minced garlic for half an hour, turning them once midway to ensure each piece absorbs the flavors.
