Stir-fried Red Mustard Greens with Garlic
Purple-red cai tai stems are stir-fried with golden garlic until just tender. The crimson stalks turn glossy and sweet with a gentle bite, a simple preparation that celebrates this prized winter vegetable.
Instructions

Wash the red flowering Chinese cabbage clean and break it.

Prepare some garlic. I like to smash the garlic cloves a bit larger, so they release the garlic aroma, and it's easy to pick them out if you don't want to eat them.

Heat oil in a pan, add garlic and stir-fry until fragrant.

Pour in the red Chinese broccoli and stir-fry quickly.

Add salt when it is almost cooked and continue stir-frying.

Turn off the heat once everything is cooked through.

Off the stove.
