
Braised Small Red Cream Crab
Small red roe crabs are braised with ginger, garlic and scallion in a rich soy glaze until the shells blush and the roe sets. Cracking each crab reveals sweet meat and creamy roe soaked in savory sauce.
Instructions

Remove the shell and internal organs from the small red crabs, wash them clean, and then cut them into pieces for later use.

Heat oil in a pan, add minced ginger and garlic along with chopped green onions, and stir-fry until fragrant.

Add the cut crab pieces and gently stir-fry them.

Add the cut crab pieces and gently stir-fry them.

Add an appropriate amount of light soy sauce, then stir-fry for a while. Add an appropriate amount of water, cover and simmer until the sauce has mostly reduced, then sprinkle in chopped green onions (I forgot to take a picture after adding the soy sauce).
