
Old skin tender meat -- Silken tofu
Delicate silken tofu is briefly fried to set a whisper-thin crisp shell around its pudding-like heart, then crowned with an aromatic soy and oyster glaze. Handling the fragile custard takes patience, but the payoff is pure silky luxury.
Instructions

The shallot is very large, cut 2 slices of shallot, crush the garlic, cut the green onion into sections, reserving 2 green parts for decoration, and cut the rest into sections;

Cut the tofu into pieces and place them in a strainer for pouring into the oil pan;

Heat the oil in a pan, reduce to medium heat, slide in the tofu cubes, and fry over medium heat until all six sides are basically golden yellow;

After frying, place it on a plate;

Strain the oil used for deep-frying into another container, leaving about 1 tablespoon of the residual oil. Add small chili peppers, green onions, shallots, and garlic, and sauté until fragrant;

Pour the light soy sauce directly into the pan, allowing the soy sauce to come into direct contact with the pan, triggering the aroma of the soy sauce;

Then add 1/2 tablespoon of oyster sauce, 2/3 teaspoon of sugar, 1/2 teaspoon of pepper, 1/2 tablespoon of Sichuan pepper powder, 1 teaspoon of dark soy sauce, and 1/3 cup of water, and bring the sauce to a boil;

Evenly pour over the fried tofu cubes, and place shredded green onions on top for garnish.
