Stir-fried green beans with pig skin debut

Cleaned and scraped pig skin is simmered tender, then flash-fried with blanched green beans, shallots and chili. Chewy, collagen-rich skin against snappy beans makes this rustic stir-fry a wonderfully satisfying way to use every part of the pig.

    Clean the pig skin and blanch it in cold water for 2 minutes.

    After scooping out and cooling, use a knife to scrape off the fat.

    Cut into strips.

    Put it into the pot, add water, ginger slices, and cooking wine, and cook for 15 minutes.

    Scoop out and drain the soup.

    Select and wash the green beans clean.

    Add a bit of salt and oil to boiling water, put in the green beans and blanch for 3 minutes, then remove and cool.
