Seaweed Shrimp Paste
Hand chopped shrimp paste is bound with egg white, cornstarch and finely cut seaweed, then poached into bouncy little balls. Sweet ocean flavor and springy texture make these seaweed shrimp spheres soup worthy delights.

Remove the shells, heads, and veins from the shrimp, then wash the peeled meat thoroughly with clean water.

Cut the shrimp into cubes.

Mince the meat; the finer, the better.

Put a spoonful of sugar and marinate for about 3 minutes.

Add another spoonful of salt, stir well, and marinate for 5 minutes.

Beat two egg whites, do not include the yolks.

Add 2 tablespoons of cornstarch.

Chop the nori finely and mix it in evenly.

Pour water and bring it to a boil.

Use a small spoon and chopsticks to roll them into the pot one by one.

Boil for about 7 minutes and remove from the pot once it floats to the surface.

Serve the soup in a bowl.
