Stir-Fried Late Vegetable Hearts

Late season choy sum is stir fried quickly with fragrant garlic slices and a splash of water along the wok edge. Simple and clean tasting, the crunchy stalks and silky leaves showcase true vegetable sweetness.

    Peel the garlic and slice it, set aside.

    Wash the choy sum and cut it into sections for later use. For the thicker stems, cut them diagonally so they cook more easily when stir-frying.

    Pour an appropriate amount of oil into the pan and sauté the garlic slices until fragrant.

    Add the choy sum and stir-fry briefly.

    After the vegetable leaves become soft, sprinkle in salt and continue stir-frying over medium heat.
