
Tomato Braised Beef Brisket
Blanched beef brisket simmers ninety minutes with peeled tomatoes, caramelized onion, bay leaves and rock sugar until fork tender. The broth turns deeply tomato sweet and savory, perfect ladled over noodles or rice for cozy dinners.

Cut the beef brisket into pieces and soak in cold water to remove the blood, changing the water several times.

Put the beef brisket into cold water, drizzle in cooking wine and bring to a boil, boil until foam appears, then remove and rinse with hot water.

Wash the tomatoes and briefly blanch them in hot water, then peel and cut into pieces.
