Dry-fried French fries with green beans

Shoestring potatoes and long beans wok-fry until wrinkled and blistered, then meet a sizzling tangle of garlic, ginger, and chili. The Sichuan dry-frying technique concentrates sweetness and edge, creating a spicy-savory side you cannot stop eating.

    Wash the green beans and cut them into sections, wash and peel the potatoes, cut them into strips and rinse off the starch, then let the green bean sections and potato strips dry or absorb the moisture.

    Cut the chili into sections and remove the seeds, chop the green onions, slice the garlic, and shred the ginger.

    Pour a little cooking oil into the pan and heat it. Add the green beans and potato strips successively and stir-fry until basically cooked through, then remove and set aside.

    Return the pot to the stove, pour in cooking oil, and heat until it is about 50% hot. First, add the Sichuan peppercorns and fry over low heat for a moment, then add the chopped green onions, ginger, garlic, and chili peppers and stir-fry until fragrant.

    Add the pork belly and stir-fry over high heat until it changes color (replaced with the stir-fried shredded meat), then add soy sauce and continue to stir-fry for 2 minutes.
