
Beer Duck Breast (Simple Version)
Lean duck breast simmered in beer turns out surprisingly tender, the malt liquid cooking down into a savory glaze flecked with aromatics. A streamlined version of the beer-duck classic that delivers bistro flavor on a weeknight schedule.

You can wash the flour, or just wash it directly, either way works.

Cut the duck breast into pieces, blanch them, and prepare the seasonings.

Do not add oil, place the duck skin side down, mainly to render the fat out to prevent greasiness. If you like fatty parts, you can ignore this.

The duck breast is golden, add star anise and ginger, and stir-fry over high heat to bring out the aroma.

Add chili and garlic, stir-fry until fragrant.

Add scallions and soy sauce, and stir-fry over medium heat.

Add beer and salt, enough to cover the duck.

Bring to a boil over high heat, cover the pot after 10 minutes, then cook for another 10 minutes. Reduce the sauce over high heat, add sliced garlic, green pepper pieces, and ground pepper, stir-fry briefly, and it's done.
