
Stir-fried Eggs with Red Peppers and Broad Beans

Peel the broad beans and blanch them, remove the seeds from the red pepper, wash it, and break it into small pieces.

Crack the duck eggs into a bowl, add salt, cooking wine, and a little water, and beat them until mixed.

Heat oil in a pan, pour in the beaten eggs and stir-fry until solidified, then remove.

Leave some oil in the pan, add the fava beans and red peppers to stir-fry, then add a little water and simmer for 2 minutes.

Add in the cooked scrambled egg pieces, season with salt, and stir-fry evenly.
