Stir-fried Eggs with Red Peppers and Broad Beans

Red pepper ribbons, tender fava beans, and fluffy scrambled eggs form a spring-bright trio bursting with color and nutrition. Mild sweetness from the beans and pepper makes this an easy, cheerful dish for any table.

    Peel the broad beans and blanch them, remove the seeds from the red pepper, wash it, and break it into small pieces.

    Crack the duck eggs into a bowl, add salt, cooking wine, and a little water, and beat them until mixed.

    Heat oil in a pan, pour in the beaten eggs and stir-fry until solidified, then remove.
