Boneless chicken thigh is marinated in soy and oyster sauce, then pan-fried skin-side down until both sides are golden and crisp. A savory salt-scallion mixture of chopped scallion, garlic, sesame seeds, and sesame oil is spooned over the sizzling meat.

    Debone the chicken leg and set the meat aside.

    Add an appropriate amount of oyster sauce, dark soy sauce, and light soy sauce to the cleaned chicken thighs, mix well by hand, and marinate for more than half an hour to allow the flavors to penetrate.

    Wash the scallions and chop them into green onion pieces.
