
Stir-fried Wild Sesame with Sauce Pork
Aromatic wild sesame leaves, with their minty, herbaceous edge, wilt briefly alongside rich slivers of soy-cured pork. The unusual pairing tastes rustic and wild, bringing forest-floor fragrance to a hearty stir-fry best mopped up with rice.

Cut the braised meat into strips.

Wash the wild sesame leaves, blanch them, then cool them and squeeze out the water. Chop them finely (I forgot to take a photo).

Garlic, shallots, green chili, and red chili are chopped finely and set aside.

Add a little oil to the pan, then add the marinated meat and stir-fry until the oil is released.

Add the chopped green onions, garlic, and chili and stir-fry until fragrant.

Add wild sesame leaves and stir-fry evenly, add a little water and simmer for 1 minute, then season with salt and oyster sauce and stir-fry well.
