Crispy Fried Shrimp Patties
Coated in crisp golden breadcrumbs and fried until the crust crackles around a bouncy, sweet interior, these shrimp cutlets demand to be eaten straight from the pan with ketchup or sweet chili sauce.

Defrost Ecuadorian white shrimp, remove the heads, peel the shells, but do not remove the shell at the tail.

Use a knife to cut open the back of the shrimp, remove the shrimp vein, spread it flat as shown in the picture, clean it thoroughly, then marinate with salt and cooking wine for 20 minutes.

Put starch, beaten eggs, and breadcrumbs into separate bowls.

Hold the shrimp tail, dip it in starch, coat it evenly, and gently shake off the excess starch.

Then coat it with the beaten egg.

Then coat it evenly in the breadcrumbs.

After cooking, arrange them one by one.

Heat the oil, add the shrimp one by one, fry over medium heat, after frying for one minute, turn each shrimp over with chopsticks, and then fry for another minute.

Turn the heat to high before taking it off the stove to prevent the shrimp from absorbing too much oil, and let it drain with a slotted spoon for a while.
