Steamed Pork Ribs with Rice Flour
Pork ribs are tossed with ginger, garlic, and broad bean paste, then coated twice in steamed rice flour. Placed over sweet potato rounds in a steamer and cooked for half an hour, the ribs turn tender and fragrant, the rice coating soaking up the savory juices.

Cut the ribs into sections, wash them clean, and drain the water.

Chop the ginger and garlic finely, add them to the ribs, add a spoonful of doubanjiang, a suitable amount of cooking wine, and mix well. Gradually add the appropriate amount of steamed rice flour in two batches and mix well. If it's too dry, add a little water. Marinate for ten minutes.

Cut the sweet potatoes into round pieces and place them in the steamer. Lay the pork ribs on top of the sweet potatoes. Steam for 25-30 minutes once the steam is rising.
