
Beef Stir-Fried with Cowpeas

Slice the beef tenderloin thinly, then mix with salt, cooking wine, light soy sauce, and a cornstarch-water mixture. After that, add an appropriate amount of rice bran oil and mix well to lock in the moisture.

Peel the garlic cloves and crush them.

Pick and wash the yardlong beans clean, then cut them into one-inch sections.

Add a little salt to boiling water in a pot, then blanch the cowpeas for 3 minutes.
