Beef Stir-Fried with Cowpeas

Beef loin slices are marinated with starch and soy to keep them silky, then stir-fried with garlic until just browned. Blanched cowpeas join the wok for a final toss, combining the tender, savory beef with the crisp-tender green beans in an easy homestyle stir-fry.

    Slice the beef tenderloin thinly, then mix with salt, cooking wine, light soy sauce, and a cornstarch-water mixture. After that, add an appropriate amount of rice bran oil and mix well to lock in the moisture.
