
Sour Soup with Beef
Yellow beef is sliced a little thicker than usual, seared quickly, and set aside. Tomatoes are fried with sugar and salt until saucy, then oyster mushrooms and the Guiyang-style sour soup base are added with bean sprouts and the beef, creating a tangy, savory stew.

Prepare all the ingredients.

Wash the tomatoes, remove the stems, and cut them into small pieces for later use.

Tear the oyster mushrooms into small sections and wash them for later use.

Pick off the roots of the mung bean sprouts and wash them for later use.

Cut the yellow beef into thin slices slightly thicker than the beef slices sold by street vendors.

This is the sour soup hotpot base recommended by the locals when we went to Guiyang.

Heat the pan and oil, add the slices of yellow beef and stir-fry until they change color, then take them out.

Then pour in another spoon of oil and stir-fry the tomatoes.

Add two small spoons of sugar and one spoon of salt to season.

Then add the oyster mushrooms and continue to stir-fry over medium-low heat.

Pour in a packet of sour soup base.

Pour in an appropriate amount of water, add the previously stir-fried beef slices, bring to a boil over high heat, then turn off the heat.
