
Spicy Shredded Pork Tenderloin
Pork tenderloin shreds are marinated with starch and a slick of oil so they fry up separate and tender, then tossed with ginger, garlic, millet chili, fermented black beans, and cilantro. Ready in minutes, the dish is fragrant, spicy, and full of wok hei.

After cutting the tenderloin into large strips, add salt, sugar, white pepper, light soy sauce, and oyster sauce.

Spoonful of starch with a little water, dissolve it, and mix it evenly with the shredded meat.

Add a large spoonful of oil, a little sesame oil, and mix evenly. This step is to prevent the shredded meat from clumping together when stir-frying. Marinate for half an hour.
