
Fragrant Beef Brisket
Beef brisket is soaked to draw out blood, blanched, then fried with whole spices and braised with white angelica root, cardamom, and ginger in a pressure cooker. The finished brisket is tender with a mix of lean and tendon, deeply fragrant and endlessly satisfying.

Wash the beef brisket repeatedly, changing the water multiple times (to remove blood).

Cut the beef brisket into small cubes.

Put water in the pot, add the beef to cold water, add an appropriate amount of cooking wine, and cook until done.

Take the beef chunks out (discard the soup).

Add an appropriate amount of cooking oil to the pot, then add spices such as star anise, cinnamon, and Sichuan peppercorns (stir-fry until fragrant, then remove and discard the spice residue).

Pour the beef chunks into cooking oil and stir-fry, add boiling water, then add seasonings such as Angelica dahurica, tsaoko, shredded tangerine peel, ginger slices, and braising soy sauce, and cook for 10 minutes.

Pour the beef from the wok into the pressure cooker, add an appropriate amount of salt, and press for 20 minutes.
