
Spicy and Sour Shredded Potatoes
Hand-cut potato shreds are rinsed until the water runs clear, then flash-fried with scallion and millet chilies in plenty of oil. A sauce of aged vinegar, dark soy, sugar, and chicken powder makes them salty, sweet, tangy, and spicy all at once.
