A reimagined Northeastern classic: pork belly simmered with aromatics until tender, sliced thin, and layered with tangy pickled cabbage and blood sausage in a bubbling pot. The sauerkraut cooks down in oil and broth for over an hour, turning mellow, rich, and deeply satisfying.

    Boil the pork with scallions, ginger, and Sichuan pepper water for 20 minutes.

    Prepare the blood sausage in advance, blanch it in boiling water for five minutes, then soak it in cold water for one minute; it won't break apart when cutting.
