Exclusive Pork Rib Pancake
Pork ribs simmer in rich braising sauce while chewy half-moon flatbreads cook against the pot rim, steaming above and crisping below. Tear off a biscuit, scoop up ribs, and the pot empties itself.
Instructions
- 1
Place the ribs in cold water and blanch to remove the blood, then wash clean.
- 2
Heat oil in a pan and add ginger slices to stir-fry.
- 3
Add the ribs and stir-fry.
- 4
Add an appropriate amount of oyster sauce, light soy sauce, dark soy sauce, and salt.
- 5
The fried ribs are transferred into the enamel pot.
- 6
Add an appropriate amount of water.
- 7
After boiling on high heat, reduce to low heat and simmer for about 40 minutes.
- 8
Set aside an appropriate amount of flour.
- 9
Add water in small amounts multiple times, and stir until it forms a dough-like texture.
- 10
Knead into a dough, cover, and let it rise for later use.
- 11
Tear the risen dough into small pieces and put them into water, letting them sit for about 20 minutes or more.
- 12
Open the lid to check whether the ribs are stewed until tender and soft.
- 13
Press the small dough portion in the palm and then push it back and forth to spread it thin.
- 14
Put it into the pot, cover, and simmer until the pancake is cooked through.
