
Lamb Spine Hot Pot
Lamb spine bones simmer in a richly spiced broth until the meat between the vertebrae turns irresistibly tender. As a hot pot base, it invites dipping vegetables and noodles into ever-deepening flavor.
Instructions

Half a meat lamb spine, today six people are eating, haha.

Put in cold water, and blanch with scallions, ginger, and cooking wine.

Spices: coriander with roots, green onions, ginger, Sichuan pepper, cinnamon, cumin, white pepper, dried chili, cumin seeds, bay leaves, rock sugar, red dates.

Add a spoon of oil, then add the seasonings and stir-fry until slightly dry. Put in the larger ones first, then the smaller ones. Make sure to dry the cilantro to prevent splattering.

Pour in the parboiled lamb spine, and season with dark soy sauce and salt.

Add hot water until it covers the lamb spine, and simmer over low heat for 1.5 to 2 hours.

After stewing for 1.5 hours.

Move it into the hot pot, cook and eat at the same time. First move the lamb spine, then strain the broth and pour it into the hot pot. After finishing the lamb spine, cooking vegetables in the broth is also great.

If Tang Shao can add some water, this soup base would be absolutely top-notch. You can cook white radish, baby cabbage, and tofu in it. It's very delicious. Paired with a bowl of rice, surrounded by a group of close friends, chatting and drinking, it's wonderful.
