Cumin Duck Frame
Roast duck carcasses tear into pieces and wok-fry with cumin, chili and sesame until every crevice turns smoky and aromatic. A gnaw-able, finger-licking dish that proves the best bits hide in the frame.
Instructions

One roasted duck frame.

Break it into large pieces and cut off the duck's tail.

Heat the oil until it's about 80% hot, then fry it briefly.

Fry until slightly dry.

Remove to control oil.

Base oil, sauté the green onions and chili until fragrant, then add the duck carcass and toss it a couple of times.

Add salt, half-crushed cumin, and if you like chili powder, you can also add some chili powder.

Off the stove.
