
Stir-fried braised pork
Leftover red-braised pork belly gets a second life in a roaring wok, its edges caramelizing while the sauce reduces to lacquer. Even better than day one, it is glossy, chewy-edged perfection.
Instructions

Cut the meat into small pieces and set aside.

After the water in the pot boils, add the large pieces of meat to blanch.

Take it out and briefly pour boiling water over it to control the water.

Cut the scallions into sections and set aside.

Cut the dried red chili peppers into sections and set aside.
