
Braised Beef
Beef chunks braise low and slow in aromatic soy-spiced liquid until fork-tender and saturated with savory depth. Serve the glossy, fall-apart pieces with rice or noodles and watch the rich gravy vanish first.
Instructions

Rinse the beef repeatedly, soaking it several times to remove the blood. Put the beef in a pot of cold water, add cooking wine, sections of green onion, and slices of ginger, and blanch.

Blanch in boiling water until cooked, skimming off the foam repeatedly.

Add an appropriate amount of cooking oil to the pot, then add the seasonings and slowly stir-fry until fragrant.

Add an appropriate amount of braised soy sauce, dark soy sauce, and boiling water, then bring to a boil.
