
Fried Egg with Small Silverfish and Chopped Green Onions
Silver-small whitebait scatter through a scallion-flecked egg batter, pan-fried until the edges turn lacy and golden. Briny, delicate and protein-packed, it is a quick coastal-style omelet that brightens any morning table.
Instructions

Dried small silverfish.

Wash clean and soak in warm water for 10 to 15 minutes.

Beat three eggs (and one of them turned out to be a double-yolk!).

Beat the eggs, add an appropriate amount of salt and chopped green onions, then add the small silver fish and mix well.

Pour the egg mixture into the pan and cook over low heat.
- 6

Fry slowly over low heat, allowing the egg mixture to gradually set, with the little silverfish clearly visible.

Once the egg mixture on top has set, immediately flip it over and continue to cook on low heat.

Pan-fried eggs with small silver fish are served on a plate, garnished with carrot flowers.
