
Braised Pork with Small Pumpkin
Silky pork belly braises red-glossy in soy and sugar, then meets sweet mini pumpkins that soak up the caramelized sauce. Melting fat, tender lean and creamy squash make this autumn braise irresistibly comforting.

Wash one small pumpkin.

Cut into pieces.

Put it into a bowl and mix with salt, the purpose is to draw out the moisture.

Prepare the pork belly that has been blanched.

Seasoning: green onions, ginger, garlic, star anise, bay leaves, cinnamon, and a small amount of dried chili peppers.

Add a few pieces of rock sugar to a hot pan with cold oil.

After the rock sugar melts and bubbles, add the pork belly and stir-fry until it turns caramel-colored.

Then add all the seasonings.

Then add an appropriate amount of light soy sauce and dark soy sauce and stir-fry evenly.

Pour heated water over the ingredients, add a bit more water, cover, and simmer on low heat.

After about ten minutes, the broth gradually reduced.

Scoop out the seasonings that you don't like to eat or cannot eat.

Rinse the salt off the small pumpkin that has released water from pickling.
