Matsutake Mushroom and Potato Slices

Thin potato slices cook with prized matsutake mushrooms so the potatoes drink in an earthy, pine-like aroma. Simple seasoning lets the rare fungus shine, producing a rustic pan dish that tastes far richer than its short ingredient list suggests.

    Wash the fresh matsutake mushrooms and let them dry.

    Wash the potatoes, peel them, and cut them into slices.

    Add an appropriate amount of cornstarch to the potatoes.
