Matsutake Mushroom and Potato Slices
Thin potato slices cook with prized matsutake mushrooms so the potatoes drink in an earthy, pine-like aroma. Simple seasoning lets the rare fungus shine, producing a rustic pan dish that tastes far richer than its short ingredient list suggests.
Instructions
- 1

Wash the fresh matsutake mushrooms and let them dry.
- 2

Wash the potatoes, peel them, and cut them into slices.
- 3

Add an appropriate amount of cornstarch to the potatoes.
- 4

Mix until evenly combined.
- 5

Heat cooking oil in a pot, then add the potato slices to fry.
- 6

The fried potato slices turn yellow and are taken out to drain the oil.
- 7

Sprinkle a little water on the matsutake as well, add corn starch, and fry in the pot.
- 8

Fry until slightly yellow, then remove and drain the oil.
- 9

Place the fried matsutake mushrooms and potato slices into a bowl, sprinkle with parsley, sea salt, and garlic powder, and they are ready to eat, crispy and delicious.
