Wheat gluten, water bamboo shoots and black wood ear mushrooms are blanched, then stir-fried with soy sauce for a light, clean dish with a delightful mix of springy, crunchy and slippery textures.

    Ingredients: wheat gluten, water bamboo shoots (shelled and cleaned), black fungus (soaked and cleaned).

    Tear the gluten apart.

    Place the water bamboo on the cutting board and slice it.

    Next, add the cut water bamboo shoots, gluten, and black fungus into a pot of boiling water and blanch for 2 minutes, then remove.

    Heat oil in a pan until hot, then add the blanched gluten, water bamboo shoots, and black fungus, and stir-fry.
