Stir-fried Monkey Head Mushroom

Soaked lion's mane mushroom is simmered until tender, then stir-fried with pork slices, scrambled egg and scallions, and finished with sesame oil and pepper for a light, nutritious dish ideal with congee.

    Prepare the ingredients according to the picture.

    Stir-fry the eggs and meat slices until smooth, set aside.

    Monkey head mushrooms (dried ones need to be soaked overnight and rinsed repeatedly until the water is clear, otherwise they will be bitter) are sautéed over medium heat, then water is added, the pot is covered, and they are simmered over low heat for 5–8 minutes.

    After braising well, add the meat slices and scallions, stir-fry on high heat, while adding salt and light soy sauce.

    When the green onions become soft, add the previously stir-fried eggs, stir a few times, add some sesame oil and pepper, then remove from heat and plate.

    No need to add chicken bouillon or oyster sauce; this dish is light and nutritious, and pairs well with plain porridge.
