
Steamed Yellow Croaker
Yellow croaker is scored, marinated with rice wine and steamed until just cooked, then finished with scallion, carrot and onion shreds plus a drizzle of seasoning sauce, keeping the fish remarkably tender and fresh.

The purchased yellow croaker is vacuum-packed and cleaned, and after opening the package, it should be washed thoroughly again. Cutting it diagonally makes it easier to absorb flavor.

Add cooking wine and sprinkle in an appropriate amount of edible salt to marinate for 20 minutes.

Bring the water in the pot to a boil. Add the chopped green onions, poaching sauce, and boiling water into a plate and steam for 6 minutes. Remove it, pour out the steaming fish broth, and discard the green onions. Then add an appropriate amount of cooked oil, and continue to steam the poaching sauce for another 6 minutes (a total of 12 minutes of steaming).

Add shredded green onion, shredded carrot, shredded onion, and sprinkle with white sesame seeds (since I don't want to use too much cooking oil, I did not heat the oil).
