Braised Prawns in Oil
Butterflied whole prawns are pan-fried until the shells turn rosy, then braised with ginger, scallion, sugar and cooking wine until the reduced sauce turns glossy, sweet and intensely shellfish-fragrant.

Prepare the shrimp.

Trim off the shrimp's head cavity, shrimp legs, and shrimp tail, then butterfly the shrimp and remove the vein.

Prepare sections of green onion, chopped green onion, sections of cilantro, and slices of ginger.
