Steamed Spare Ribs with Black Bean Sauce

Ribs are rinsed clean, marinated twenty minutes in a sizzling mix of garlic, black beans and ginger with soy, oyster sauce and sugar, laid over softened bean curd sticks and steamed for twenty minutes, a classic dim sum favorite.

    Sprinkle a small amount of flour on the ribs, add water, and wash off the blood.

    Filter the water and set it aside for later use.

    Put minced garlic, fermented black beans, and ginger in a bowl and pour hot oil over them.

    Add three tablespoons of light soy sauce, half a tablespoon of oyster sauce, a small amount of white sugar, and mix well.

    Pour it into the ribs, add an appropriate amount of cornstarch, stir evenly, and marinate for 20 minutes.

    Soak the dried bean curd sticks until soft and lay them in a plate.
