
Green Onion and Ginger Mud Crab
Fresh swimming crab pieces are lightly seared, then braised with fragrant ginger, scallions, cooking wine and a glossy starch-thickened sauce, a coastal classic that lets the sweet crab meat shine.

Cut the swimming crab open. Pry open the crab shell, and cut the crab legs into pieces. Arrange on a plate.

Pour starch over the plated Chinese mitten crabs.

Chop the scallions and ginger, set aside.

Heat the pan and oil, fry the swimming crab in the oil for a while, fry until it is slightly charred, then plate it.

Heat the wok and oil, then add the scallions and ginger to stir-fry until fragrant. Then add cooking wine and a bowl of water. Simmer for 2 to 3 minutes. After that, add cornstarch slurry to thicken. Stir-fry for another 2 minutes, then plate and serve.
