
Typhoon Shelter Style Stir-Fried Shrimp Exclusive
Plump shrimp are marinated, dusted with starch, and fried until golden, then tossed with toasted bread crumbs, garlic, and dried chili in the classic Hong Kong typhoon shelter style that is crunchy, garlicky, and irresistible.

Clean the prawns, handle the heads, butterfly them to remove the vein, drain the water, then marinate with an appropriate amount of salt, ginger slices, and cooking wine for 15 minutes.

Rinse the prepared shrimp with clean water, drain the water, sprinkle some dry starch, and mix evenly.

You should prepare a relatively large amount of minced garlic and stir-fry it in oil until fragrant (note to use low heat and not burn it), then drain the oil and set aside. I did not prepare this part here.

Fry the shrimp in oil until both sides are golden brown, then remove and set aside.

Add the seasonings to the pot.

Add some breadcrumbs.

Pour in the shrimp and stir-fry, then add more according to the amount of breadcrumbs. If garlic was stir-fried in the previous step, add it at this time. If you feel the saltiness is not enough, you can add an appropriate amount.
