Spicy Chicken Cubes

Diced chicken is marinated, flash-fried until golden, then tossed with dried chilies, Sichuan peppercorns, and garlic in a classic Chongqing preparation that is deeply aromatic, numbing, and boldly spicy.

    Prepare the condiments.

    Cut the chili peppers into sections and sieve out the seeds, as the seeds can easily burn.

    Cut the chicken breast into 2 cm cubes, add cooking wine, light soy sauce, oyster sauce, pepper, a small spoon of salt, and a small spoon of cornstarch, mix well and marinate for 20 minutes.

    Heat oil in a pan, and when the oil reaches 50% hot, add diced meat and fry until golden.
