Sweet and Sour Braised Tofu
Triangular tofu pieces are fried until golden, then braised in a bright sweet-and-sour sauce with wood ear and bell pepper strips, delivering a glossy, tangy glaze that makes the humble bean curd shine.

Wash the tofu and cut it into triangular pieces. Prepare minced green onion, ginger, and garlic. Separately, cut the green onion diagonally and shred the red bell pepper. Soak the wood ear mushrooms in advance (I didn't prepare them today; the shredded bell pepper and wood ear mushrooms are for garnish and decoration). Prepare the sauce according to the ratio of 2 parts white sugar : 1 part vinegar : 1 part soy sauce : 2 parts starch : 6 parts water, and add a little salt to the sauce.

Heat the oil in the pan until it boils.

Fry the tofu cubes in the pot with oil.

Fry the tofu until golden and set aside.

Leave some oil in the pan, bring it to a boil, then add the chopped green onions, ginger, and garlic to stir-fry until fragrant.

Add the tofu cubes and stir-fry a few times.

Add salt and light soy sauce, and stir-fry evenly.

Pour in the sauce and bring it to a boil, then add the wood ear mushrooms (not prepared in the picture).

Cover the pot and simmer over medium-low heat for 5-10 minutes.

Add the diagonally sliced green onions and bell pepper strips and stir-fry until just cooked.

Take it out of the pot and serve it on a plate.
