Lotus Root Slices with Fermented Red Bean Curd

Crisp blanched lotus root slices are pan-seared and glazed with a savory fermented red bean curd sauce, finished with scallion for a Cantonese-style dish that balances briny depth with gentle sweetness.

    Remove the ends of the lotus root, peel it, and cut it into thin slices.

    Bring a pot of water to a boil, add the lotus root slices, blanch for two to three minutes, and then remove them.

    Immediately put the lotus root slices into cold water to cool, this way they will be crisper.

    Flatten two pieces of fermented red bean curd with a spoon, then pour in some fermented red bean curd sauce and mix well.
