Velvety strips of marinated chicken breast are flash-fried with crisp blanched bamboo shoots and sweet pepper slivers, creating a light, clean stir-fry that pairs tender juiciness with refreshing crunch.

Fresh bamboo shoots.

Clean the bamboo shoots.

Cut into thin strips.

Blanch in water, remove, place on a plate, and set aside.

Clean the chicken breast.

Remove the stems and seeds from the green and red peppers, wash them, and cut into thin strips.

Cut the green onions into sections, slice the ginger, set aside.

First, mix the shredded chicken with salt, cooking wine, and cornstarch slurry, and marinate it for later use. Place a wok over the fire, pour in oil and heat it, stir-fry the scallion sections and ginger slices until fragrant, then add the shredded chicken and stir-fry until separated. Next, add shredded bamboo shoots, shredded green pepper, and shredded red pepper and stir-fry. Add an appropriate amount of water, cover and simmer until almost cooked, then season with salt to taste.
