Tender glutinous bamboo shoots are blanched briefly, then blasted over high heat with golden garlic and fiery bird's eye chilies. Oyster sauce, soy, and a sizzle of white vinegar along the wok's edge create a crisp, tangy, mildly spicy stir-fry.

First, chop the garlic and small chili peppers finely, and cut the green onions into sections. You can chop more garlic, as it will be more fragrant when stir-fried.

Blanch the glutinous rice bamboo shoots first. When the water comes to a boil, add the glutinous rice bamboo shoots and cook for about 30 seconds. Rinse twice with cold water and drain.

Heat the pan and add cold oil. Once the oil is hot, add garlic and small chili peppers to stir-fry until fragrant.

When the garlic turns yellow, add the glutinous rice bamboo shoots and stir-fry over high heat. You need to stir-fry for about 2 minutes, constantly stirring in the middle so that the glutinous rice bamboo shoots can be evenly heated, which will make them taste crisper.

First, add 1 spoon of oyster sauce and 2 spoons of soy sauce, and stir-fry for about 30 seconds.
