Stir-fried Chicken with Black Pepper and Cucumber
Chicken breast cubes marinated in salt, wine, and cracked black pepper are seared until nearly done, then tossed with cool cucumber chunks and finished with a silky cornstarch glaze. Juicy, peppery, and vibrant, a light yet satisfying stir-fry.
Instructions
- 1
Wash the cucumber and chicken breast, and cut them into small cubes. Marinate the cubed chicken breast with salt, cooking wine, and black pepper for 15 to 25 minutes.
- 2
Pour rapeseed oil into the pan, when the oil is about 80% hot, add the marinated chicken breast and stir-fry until it is 90% cooked.
- 3
Add the cucumber chunks and stir-fry. At this time, a large amount of juice will be released. Add an appropriate amount of chicken essence and edible salt (not too much, because the meat was salted earlier) and continue stir-frying.
- 4
After the meat is fully cooked, add a mixture of water and starch to thicken the sauce, then plate it.
