Northeast Mixed Stew
A hearty Northeastern Chinese one-pot stew that brings together chewy sweet potato noodles, mung bean sheets, tofu products, and yuba in a nourishing broth. Finished with scallions and served with a punchy dip of garlic, chili powder, and vinegar.

Boil the vermicelli in boiling water for 2 minutes, then remove and set aside.

Soy products are also soaked in hot water.

Cut the tofu into small pieces.

Add Baoyuan soup to the pot and put in all the ingredients.

Put ground chili, vinegar, salt, and seasonings in a bowl and set aside.

Pour it into the pot, stir well, sprinkle with home-grown chopped green onions, and turn off the heat.
