Boiled vegetables

A clean, wholesome vegetable hot pot simmering carrots, pumpkin, sweet corn, dried tofu, wood ear mushrooms, soybean sprouts, leafy greens, and sweet potato vermicelli in one pot. Seasoned with nothing but salt, it celebrates natural sweetness and gentle, comforting flavors.

    Prepare the ingredients.

    Soak the black fungus in boiling water for half an hour in advance, then add a little flour to rub and wash it clean, and set it aside.

    Rinse the sweet potato noodles. Then soak them in clean water for a while.

    Wash the green vegetables and soybean sprouts clean and set aside.

    Peel and wash the pumpkin, then cut it into pieces. Cut the sweet corn quickly. Cut the dried tofu into pieces. Wash and peel the carrots, then cut them into pieces. Put them all into a stew pot.

    Blanch the black fungus in water in advance, then remove and drain the water.

    Put the black fungus into a stew pot, add water, cover and bring to a boil over high heat, then turn to low heat and continue to simmer for a while until the carrots and other ingredients are cooked.
