Hand-shredded chicken
Tender chicken legs are steamed with ginger, red dates, and goji berries, then chilled and hand-shredded into silky strips. A hot-oil dressing of soy sauce, chili powder, toasted sesame, and fresh lemon makes every bite bright and appetizing.
Instructions
- 1
Prepare the ingredients: Wash the chicken legs and place them in a plate. Put a bowl in the center of the plate to collect the juice, and spread the ginger slices, red dates, and goji berries over the chicken legs.
- 2
Place it in a steamer and steam for about 30 minutes.
- 3
Next, mix the seasonings well. Two tablespoons of light soy sauce, one tablespoon of sugar, a little chili powder, an appropriate amount of minced garlic, pour hot oil over it, and then add white sesame seeds.
- 4
After half an hour, the chicken drumsticks are steamed. Put the chicken drumsticks into ice water to soak for a while, tear the chicken into small strips by hand (without the skin), and mix the seasoning with the chicken evenly.

Finally, add a few slices of lemon, and then pour the juice from the steaming tray over it.
