
Braised Spare Ribs
Ribs braise fifty minutes in the pressure cooker with star anise, cassia, caoguo, baizhi, and gardenia, emerging lacquered, spice-scented, and fall-off-the-bone tender. A sprig of mint brightens the rich, mahogany glaze.

Bought a rack of ribs and had the shop cut them, these are not prime ribs, soak and wash them repeatedly.

Put the ribs into the pot, add the sections of green onion, and slowly bring to a boil.

Skim off the foam, add cooking wine, and cook until the raw taste is gone.

Scoop out and set aside.

Prepare various seasonings.

Add an appropriate amount of cooking oil to the pot, and add the seasonings over low heat to bring out the aroma.

Add light soy sauce, dark soy sauce, ginger slices, star anise (for coloring), and dried chili peppers, and cook for 5 to 10 minutes.
