
Bitter Melon and Hangzhou Pepper Beef Tenderloin

Cut off both ends of the bitter melon, cut it in half lengthwise, remove the seeds, and slice it into thick pieces.

Wash the Hangzhou peppers, remove the stems, and cut into sections.

Slice the beef tenderloin into thick pieces against the grain.

Add 1 spoon of salt and cornstarch to the sliced beef tenderloin, and mix well, set aside.

Drain the bitter melon, and cut the ginger into thin strips.

Heat the pan and oil, then stir-fry the shredded ginger and Hang peppers until fragrant.
